I picked my 1.6HDIEGC 2008 up on Friday, very impressed.
Only thing troubling me is the hill starts, being so used to an automatic, its strange having to use the handbrake for hill starts, but that'll get better with time.
Not sure how the EGC work, on manual cars on a steep enough slope it hold the handbrake briefly as you drive off to prevent going back when you engage the clutch
Not sure if it's the same but on my 2008 which isn't an EGC the hill start will only engage if I press firmly/harder on the brake, otherwise I roll back when the handbrake is released.
So basically try pressing harder on the brake...might be different on the EGC but doubt it.
My previous experience on a 308 EGC and expectation of my forth-coming 2008 eHDI EGC Allure is that the foot brake holds for a second or two to give one time to get the foot onto the throttle pedal - one should not need to use the handbrake at all during the procedure.
